Pigs will be butchered at the end of November. Half a pig is about 100 lb of meat (when hanging at the butcher shop). You will get to choose the cuts you want options include: spare ribs riblets pork chops cutlets sausage (all types) ground pork bacon shoulder roast smoked hocks soup bones ham organs can be kept too (kidneys, heart, skin, tongue, tail, head, ears, lard).
